This one is easy - throw some smoked salmon, low-fat greek yogurt, and a little balsamic in a blender to whip up some refrigeratable salmon salad. Pre-cut and pit an avocado (pro-tip: keep these in the fridge in a container with water to keep them green and fresh!), and then in the morning when you're running late you can just grab your containers and you'll have an easy and delicious lunch ready to throw together at work!
