Chicken salad is great--you can even customize it with your favorite sauces and mix-ins. My favorites: celery, red grapes, Miracle Whip, and a little ranch dressing.
Pack your chicken salad seperately. If having with bread or crackers, you don't want them getting soggy. Yuck.

Top with your favorite dressing, but pack it separately from the greens...again, to avoid soggy-ness.

Skip the step where you cook the chicken, just add your rotisserie chicken in at the end.

Make sure to pack your chicken mixture separately from your tortilla and veggies.

If you want avocado as a topping, don't prep it until the morning of or the night before. Cut the avocado in half but keep it in the rind. Give it a squeeze of lime juice and wrap tightly with plastic wrap. Air=brown avos. Just scoop out with a spoon after you've heated your casserole!
