How To Prepare A Fireworks-Worthy Fourth Of July Food Bar

"Grandma's Potato Salad" - 2 lbs. of Yukon Gold potatoes, peeled and cut into 3/4 inch cubes - 1/2 of a small red onion, finely chopped - 1 celery stalk, finely chopped (1-2 pieces is ok) - 2 hard boiled eggs, peeled and cut - 3 tbsp. of dill pickle juice, plus 1/4 cup of dill pickles finely chopped into 1/4 inch slices - 1 1/2 tsp. of salt - 1 tbsp. of yellow mustard - 1/4 tsp. of pepper - 1/2 tsp. of celery seed - 1/2 cup of mayonnaise - 1/4 cup of sour cream
Place the potatoes in a large saucepan with cold water to cover the potatoes by 1 inch. Bring the water to a boil over high heat, add 1 tsp. of salt, and then reduce the heat to medium low. Simmer until the potatoes are tender, which should take approximately 10-15 minutes. Don't overcook the potatoes, or they will turn out mushy. Next, drain the potatoes thoroughly, then spread them out on a rimmed baking sheet. Mix 2 tbsp. of dill pickle juice and 1 tbsp. of yellow mustard together in a small bowl. Drizzle the mixture over the potatoes, and then toss the potatoes until they are evenly coated. Refrigerate the potatoes until they are cooled, which should take approximately 30 minutes.
Mix the remaining red onion, celery, dill pickle juice, dill pickles, salt, pepper, celery seed, mayonnaise, and sour cream together in a large bowl. Toss in the cooked potatoes. Then, cover and refrigerate everything until it is well chilled, which should take approximately 30 minutes. Gently stir in the eggs.
You can make this potato salad up to two days before your Fourth of July party!
